Thai Fishcakes Recipe (Tord Man Plaa)

Ingredients

  • 500g white fish fillets (any white fish)
  • 130g red curry paste
  • 4tbsp fish sauce
  • 1 egg lightly beaten
  • 80g tapioca flour
  • 10g baking powder
  • 20g palm sugar
  • 10 kaffir lime leaves, thinly sliced without the stem
  • 8 long beans thinly sliced

First of all mince or blend the fish fillets. Place in a bowl and add all of the other ingredients mixing thoroughly.

To make fishcakes use your hands shaping the mixture into flat cakes about 5cm in diameter. Put quite a bit of the oil (vegetable) into a frying pan or a wok and when it is hot add the fish cakes. Fry fishcakes until they start to turn golden brown (about 2-3min). Then take them out and put them on kitchen paper to drain the fat. It is best to fry the above quantity in about 5-6 batches.

Serve the fishcakes while they are still hot with sweet chilli sauce.
